Panettone and Chocolate Pudding

Serves 8-12
• ½ cup sultanas
• ½ cup boiling water
• 4 medium sized eggs
• 300ml pouring cream
• ¼ tsp vanilla bean paste
• ½ cup sugar
• 275ml milk
• 50g grated dark chocolate
• 750g panettone cut into thick wedges
• 60g almond flakes toasted
Preheat oven to 180°C.

Place the sultanas into a bowl and cover with the boiling water. When the water has cooled, whisk in the eggs, cream, vanilla, sugar and milk. Stir in the dark chocolate.
Grease and line a 25cm spring form tin or similar baking dish. Place a couple of pieces of panettone at a time into the egg mixture and saturate with egg. Lay the panettone into the tin overlapping until all the panettone has been used. Whisk the remaining mixture and pour this over the panettone ensuring that the sultanas and piece of chocolate are evenly distributed. Sprinkle over the toasted almonds and bake on the middle shelf for 60 minutes. Turn off the oven and allow the pudding to cool in the oven for another 20 minutes.

Serve warm or cold with ice cream, cream or yoghurt.

Ice Cream Panettone

Cut a Panettone in horizontal layers without discarding the top of the outer crust. Pour some sweet liqueur over each layer until the sponge has soaked the liquid, and then spread a uniform fairly thick layer of ice-cream of your choice over each layer. Reassemble the cake carefully and place it in the fridge.

In this way the ice-cream will retain its solid consistency, and this delightfully colourful ice-cream Panettone will be easy to serve.

Breakfast Panettone

Breakfast Panettone

For a delicious breakfast cut thin slices of Panettone and place into toaster - for thicker slices place under grill. Once toasted to your preference spread with butter. Melt 15g of butter in a small pan and add 2 teaspoons of brown sugar together with a squeeze of half an orange. Heat over medium heat, stirring until sugar has dissolved – this will give you a thick buttery sauce. Quickly add your fresh berries and stir over for 1-2 minutes until soft and juicy.

Serve the hot berries with juice on the Panettone and add cream.
